Here's a wow seafood banchan that you've might travelled to Korea for! Available for a very limited period this festive season.
Soy Marinated Crab (Ganjang Gejang) - 2 whole female crabs, approx. 200-280g each
The OG of Korean raw crabs. To emulate some of the best raw Korean crabs we've tasted, we use LIVE wild-caught female (read potential roe ;) blue swimmer crabs.
We then marinate these uuuuber fresh crabs whole (just like in Korea) in a soy-based superior stock cooked from scratch and bubbling for hours. And because it is a Wanting Kimchi recipe, you will be assured that it will not be overly salty or sweet but still full of flavour. After marinating, we then deep-freeze the banchan at specific minimum temperatures and duration to make it a little safer to consume raw**.
To enjoy these soy marinated raw crabs, thaw in fridge upon receipt and consume within 24 hours of thawing. For longer shelf life, freeze it immediately upon receipt for up to a week. As these crabs are marinated whole (because yay roe ;) you will have to open them up and remove the gills, apron and tomalley before enjoying (but it will be worth it!).
The soy marinated raw crab is made with a secret Wanting Kimchi recipe containing seafood, alliums, soy sauce, and sugar.
Spicy Seasoned Crab (Yangnyeom Gejang) - 6 pcs, equivalent to 2 male crabs, each crab weighing approx. 210-300g
The relatively newer and my personal favourite style of enjoying Korean raw crabs. We process LIVE wild-caught male (read: meatier) crabs in our SFA-licensed kitchen.
These fresh crab pieces with jelly-like flesh are then then marinated it in a thick spicy, sweet, ultra umami sauce (if you've tried our cuttlefish or jellyfish banchan before you know we know our spicy sauces hehe). And because we are super kiasu, we then deep-freeze the banchan at specific minimum temperatures and duration to make it a little safer to consume raw**.
